Food & Culture: Azyun Truffle Fried Rice Recipe

After chatting with Justin Wong this week, Fête Chinoise was excited to learn that he would be sharing the famous Truffle Fried Rice recipe at his restaurant with our community. We hope you have the opportunity to try out AZYUN Restaurant’s signature dish and enjoy it at home. It does seem like Fried Rice is an expected menu item for Chinese restaurants, although mostly with meat. The delicious recipe below is vegetarian-friendly and a great example of what fusion cuisine looks like!
Ingredients
1 cup Cooked rice
(Preferably overnight cooked rice)
½ cup Mixed mushrooms (your favourite mushrooms!)
¼ cup Cauliflower/Seasonal vegetable
¼ cup Scallions/Green Onions
1 tbsp Tartufata Truffle Paste
1 tbsp Canola oil
1 tsp Unsalted butter
Salt to taste
Instructions
1. Heat wok on stove and add Canola oil
2. Add Mixed mushrooms and Cauliflower to wok and toss for 2 minutes
3. Add Butter to wok and melt to coat vegetables
4. Add remaining ingredients (Rice, Truffle Paste, Scallions) to wok and toss till heated thoroughly
5. Serve in bowl and top with your favourite garnishes. (We like to use crispy shallots, sesame seeds, pickled grape tomatoes, and a fried egg)
